Ingredients
1 Handful of spring Mix
1 Handful of spinach
1 cup broccoli
1 cup cauliflower
2/3 cups purple cabbage
1/2 orange bell pepper
1/2 red bell pepper
1/2 apple
6 Cherry tomatoes (halved)
2 tbsp Lemon Juice
1 tbsp olive oil
Preparation
Begin by chopping the cabbage and bell peppers into inch-sized pieces. Cut the broccoli and cauliflower into bite-sized florets.
Combine all with the rest of the vegetables and tomatoes in a large bowl and toss with lemon juice and olive oil.
Garnish the salad with thinly sliced apple pieces and serve.
