Gingerbread Balls
Ingredients
100g Unsalted Cashew Nuts
50g Pecans
8 Medjool Dates stones removed
1/2 tsp Ground Ginger
1/4 tsp Ground Cinnamon
Preparation
Place the cashew nut and pecans into a food processor and pulse until the nuts are mostly all broken up. Roughly chop the medjool dates and add them to the food processor along with the ground cinnamon and ginger.
Turn the food processor on and allow the mixture to thoroughly combine until it sticks together when pressed between your thumb and finger.
Once combined, take out 1 tablespoon of mixture and roll it into a ball, gently but firmly. Repeat this process until all of the mixture has been used up. Refrigerate the bites until chilled and enjoy.
Vegetable Frittata
Ingredients
Spinach
Courgette
Broccoli
Rocket
Tomatoes
Onion
Kale
Cabbage
Mushroom
Peas
Green peppers
Cauliflower
7 eggs
Coconut oil
Preparation
Chop up all veg and place in a hot pan with coconut oil. Beat all the eggs and leave to one side.
Heat through the veg until it starts to go soft.
Place all the veg in an ovenproof dish and pour the beaten eggs over the top.
Gently shake the dish to ensure it is level and even.
Place in a preheated oven at 180 for 25-30 minutes.
This easily feeds four and will keep in the fridge for three days and can be eaten cold with salad for a simple lunch Idea.
