Chicken Skewers

Ingredients

4 skinless, boneless chicken breasts cut into 2cm cubes


For the Marinade

  • Juice of 2 limes

  • 2 tsp ground cumin

  • 2 tsp ground coriander

  • 4 garlic cloves, crushed, or finely grated

  • 4 tsp finely grated ginger

  • 4 tbsp coconut milk

Preparation

In a bowl, mix together the ingredients for the marinade, then add the chicken pieces and season with salt and pepper. Stir to coat the chicken in the marinade and cover the bowl with a plate and leave to marinate for 10 minutes.

Take the chicken pieces out of the marinade and thread them onto the skewers. Place a frying pan on a medium-low heat, add the chicken and cook for 4-5 minutes on each side or until the meat is cooked all the way through.
