Ingredients
• 450g of minced lamb
• 3-4 tbsp of finely chopped Greek herbs such as dill, mint, oregano and parsley
• Sea salt to taste
• 2 hearts Romaine lettuce finely chopped
• 1-2 tomatoes, chopped
• 1 large or 2-4 small cucumbers, chopped
• 1 cup pitted Kalamata or other Greek olives
• 2 tbsp of lemon juice
• 3-4 tbsp of extra virgin olive oil
Preparation
Saute ground lamb with herbs for 12-15 minutes, or until cooked through Add salt to taste.
Combine meat with lettuce, tomato, cucumber and olives.
Whisk together with lemon juice and olive oil. Drizzle on top of the salad.
